Taren’s Burrito Bowl Recipe
Easy and delicious - as simple as that!
INGREDIENTS:
- 1/4 cup black beans 
- 1/4 cup cooked brown rice 
- 1/2 cup of red cabbage, sliced thin 
- 1 tsp chicken or vegetable broth 
- Pinch of cumin 
- Pinch of cayenne 
- Pinch of garlic powder 
OPTIONAL:
- 3 oz precooked grilled chicken breast, sliced thin 
- Handful chopped romaine lettuce 
- 2 tbsp. nonfat greek yogurt 
- 2 tbsp fresh salsa 
- 1 tbsp guacamole 
- Fresh cilantro, for garnish 
- Sliced green onions, for garnish 
TO PREP
- In a skillet, heat the black beans with broth, cumin, cayenne, and garlic powder on high for 5 minutes. 
- Add red cabbage to a bowl, then spoon the beans on top. Layer sliced chicken, lettuce, greek yogurt, salsa, and guacamole. Top off with cilantro and green onions.
